**Salmon Shioyaki:** Sashimi-grade, salt-cured and grilled. A classic.  
**Shirobuta Pork Katsu:** Shirobuta rosu, panko-crusted, fried.  
**Halibut Shoyu Kombu:** Boneless halibut, roasted under a caramel shoyu glaze, topped with shio kombu.  
**Unagi Kabayaki:** Freshwater eel, grilled and lacquered in kabayaki sauce.  
**Green Goddess:** Mushrooms and vegetables in season. Built vegetarian from the rice up.
